Modum praeparationis

Poma vel pira depilata sunt, semen nidum tolluntur, 6-8 minuta in saccharo syrupi cocta cum acido citrico acidificato. Fructus sumuntur, syrupus percolatur, uva parata ei additur (p. 306), fructus iterum funduntur et refrigerantur; malum vel pirum in patera ponitur et surrepo infunditur. Mala celeriter cocta et pira matura non cocta, sed in ferventi syrupo posita, calefaciunt et in eo relinquunt, donec refrigerantur.
