Modum praeparationis
Brassica aluminis ponatur in sorbitione decoctionis vel aqua, et pro 0-15 minuta decocta. Deinde iurulenta betae (p. 61) herbas browned et coques donec tenera. 5-10 minutes ante finem coquendi, adde sal, saccharum, aromata. Cum usus sauerkraut, brassica iurulenta in borscht cum betae introducitur. Borscht farina fusca condiri potest, sorbitione vel aqua diluta (X g per 10 g borscht).
