Jus ex parvis piscibus coquitur et percolatur. Potatoes in ius decoctionis ponuntur cum tuberibus integris, capitibus cepae, apio, in pecias tenues incisae, et decoctae. XV minuta ante pulmentum piscis paratum est, pone paratas portiones piscium (pertica vitta pilum cum pelle et ossibus costis et vitta burbot sine pelle cum costis ossibus). In fine coctionis, butyrum in aurem ponitur. Olera minutatim concisae, serviuntur ad pulmentum piscium separatim. Cum massa coquendi pulmentum piscium separatim coquitur et relinquatur. Pisces pulmentum sine oleo coqui possunt. Praeparari potest ex uno pilo pertica vel burboto, vel ex siluro, pilo, salmo, cyprino, cyprino, respective, crescentibus impositione piscium.
